Ingredients

– S&W Fresh Pineapples
– 1 1/3 cups all-purpose flour
– 1¼ tsps. baking powder
– ½ cup packed light brown sugar, separated
– 2 eggs
– 1 cup buttermilk or coconut milk
– 4 tbsps. melted butter
– 1 tsp of pure vanilla extract
– ¼ tsp of ground cinnamon

How to Prepare
  1. Cut S&W Fresh Pineapple into slices, then pat dry with a paper towel. Mix the flour, baking powder and brown sugar in a large bowl.
  2. Whisk eggs, buttermilk (or coconut milk), melted butter, vanilla extract, and cinnamon until batter comes together.
  3. Heat extra butter on a non-stick skillet, then add one pineapple ring once hot. Sprinkle top of pineapple with brown sugar, then turn once browned.
  4. Pour 1/4 cup of batter over the pineapple, allowing it to go outside of the ring. Cook until bubbles form, and until bottom is golden brown.
  5. Flip entire pancake over, including the pineapple. Let the other side cook until golden brown.
  6. Remove pancake and place in a warm over pineapple side up, and repeat the process until all pancakes are done.
